Negro huitlacoxe
About This Spot
Negro Huitlacoxe unfolds like a warm secret in the heart of Tulum, where the pulse of the town slows just enough to savor moments around fire and flavor. Nestled on Calle Andromeda, this Mexican restaurant welcomes you into a cozy courtyard softly shaded by trees, where open flames flicker alongside the low hum of conversation and the gentle flutter of bats overhead. It’s a space that feels lived-in and inviting, where the pace is unhurried and every detail whispers care.
Here, the kitchen is a shared experience — food is crafted over open fire pits right before your eyes, blending smoke and earthiness in a way that anchors you firmly in place and time. The aroma of roasting corn mingles with the whisper of traditional and inventive salsas, while dishes like quesadillas brimming with huitlacoche, the distinctive local fungus, invite you to explore flavors rarely found beyond Mexico’s borders. Whether you come seeking the comfort of slow-cooked birria or a sip of mezcal that tastes like history and hearth, there’s a feeling of genuine connection in every bite and pour.
Conversations here drift easily from the textures of the elote appetizer to the subtle heat of a side of habanero sauce, revealing a menu that honors tradition while leaning into approachable creativity. The open kitchen layout brings an intimacy to dining, allowing you to watch skilled hands coax the best from humble ingredients. It’s a casual local eatery that feels more like catching up with old friends, where every visit lends a fresh discovery — be it in the gentle crackle of the fire or the layers of a perfectly balanced taco.
Negro Huitlacoxe doesn't rush you. Instead, it invites you to settle into the evening, letting the warmth of the courtyard, the texture of the food, and the calm energy of shared moments sink in. It’s a place where Tulum’s laid-back spirit meets a deep respect for the land’s distinctive flavors, creating a quietly memorable experience that lingers long after the meal ends.

We had a really nice dinner served by Sophia, who did a great job guiding us through selections of food and drinks. Super cozy restaurant courtyard with trees, open fire and lots of bats. They cook alot of the food in the courtyard right in front of the tables. We had guacamole and corn ribs for snacks, both were really good. Different tacos and quesadillas for main and some tequila and mezcal together with the mexican grasshoppers after. We had a great experience alot thank to our server Sophia who took the time to explain pairings and what not to miss on the menu, a great evening 10/10, would definitely go back again!

Ridiculously good. The roasted corn appetizer, the birria and short rib. The drinks. All first class in a fabulous atmosphere. Ate here twice. All food made over fire. The birria is a 8+ hour slow cook. I still dream about it.

We truly adore the atmosphere. Cozy seating and an open kitchen make the experience pleasant. Food was pretty tasty but most of the vegetarian options weren't available. Modern and authentic concept at the same time. Makes the place attractive.

The corn starter was genuinely unbelievable! ——— FOOD Grilled Corn / Probs the best starter I’ve ever eaten. Came with habanero and other condiments Vampiro / The meat was so tender with great layers for flavour Aubergine and Huitlacoche Taco / Huitlacoche is a fungi with a distinct flavour profile - do try as it was the only place that served it Rice pudding / It was more than rice pudding with creme brûlée like elements. I feel like they are so confident in their starters and main that they can undersell the pudding knowing that you’ll still get it - which is exactly what we did lol ——— DRINKS Don’t remember the full names but we really enjoyed having non-alcoholic options that were made in the restaurant. I had a creamy blue corn drink and my shady partner had a fruit drink with a lime sorbet. ——— EXTRA It was all so flavourful - never experienced anything like it before. Jorge was our waiter who was friendly, and gave good recommendations. 10/10 would recommend - have already rebooked for next week!

We like it so much that we came here for dinner with a reservation two nights in a row. We tried most of the menu: guacamole, corn, tacos, quesadilla etc... All the meals were great and tasty. Ask for the habanero sauce on the side, if you like really spicy sauce. We had a lovely dinner, one of the best Mexican restaurants that we've ever tried. The atmosphere is authentic with an open kitchen, music and a lot of Mexican decorations. Unfortunately, the service was the only negative. While the waiters are very friendly and smiling, half of our order got lost on the way to the kitchen and we had to wait 1h30 for our quesadillas. We also had to wait 15min+ at the entrance while they were searching for our table. The experience is nearly perfect, but the organization within the staff can probably be improved. The place is always full, so having a reservation before coming is almost always necessary. Overall, this is a MUST if you are in Tulum and want to enjoy authentic tasty Mexican food.

This restaurant was really nice for our night out. It has outdoor alley style seating with jungle aesthetic which was nice because it's in Tulum Centro. The menu is carefully curated, can tell the chef is highly trained. We got birria tacos, corn ribs, and steak/guac tostada. So good!! These basic foods were elevated to an experience. The flavoring was out of this world. There is a nice selection of alcoholic drinks on theme and house made to taste. The portions were small and the food pricy - compared to NYC prices. Service was attentive and friendly.

This place must be one of my favorite dining experiences in tulum. First of all the place is very beautiful decorated. Everything is fine with much love. When I walked by I noticed a nice Smokey smell. The staff was very helpful and friendly. The food was incredible and very unique in its taste and presentation. Also I loved that there was paint and a brush on the toilet so people can leave something creative there. Highly recommend that place. I’m coming back!

If you are in Tulum, this place is a MUST!!! Food is incredibly good. We had some vegetarian and non-vegetarian tacos, a Huitlacoxe quesadilla, the asparagus and artichoke salad and the cherry on the cake was the dessert- that churro with ice cream and nuts ! the place is lovely and cosy and decoration well curated. It is lovely to see how they highlight the maiz, and make visible the entire process, from grinding the corn, doing fresh tortillas and cooking them in the comales. Besides the great food the entire staff, specifically Checo, made our experience amazing!!! The service was fantastic, friendly, and accommodating. keep rocking and serving amazing food with a smile! If we al ever come back to tulum, this will be our fist stop
